While visiting friends and family, we heard of an ice cream store that was unlike any other. As former Haagen-Dazs and Gloria Jeans Coffee Bean franchisees and "lovers of ice cream and coffee", we could not pass up the chance to experience a new and extremely different concept in the making of ice cream. We were so impressed with the process, that we wanted to create a similar, but better experience for the people of Atlanta, Georgia. Not only did we want to sell ice cream, but our vision included the sale of great coffee and homemade cheesecake, bringing science and deliciousness together.
What makes our ice cream better is that we make it to order. We do this by using Nitrogen at a temperature of minus 320 degrees. The rapid freezing of the milk fat and water particles by the use of Nitrogen, causes them to stay very small, giving the ice cream its creamy consistency. The goal is to make water molecules and fat molecules as small as possible!
Because nitrogen ice cream is made to order, it is a thicker product, denser than store-bought churned ice cream, which means it takes longer to melt and more time for you to enjoy. Nitrogen ice cream also holds up well in high heat which means it can be delivered to you through an online delivery service without melting before you get it.
