To make Jordanian Mansaf, you will need:
Ingredients:
- 2 lbs. lamb shoulder or leg, cut into large pieces
- 2 cups plain yogurt
- 2 cups water
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. ground cardamom
- Salt and pepper to taste
- 3 cups long-grain rice
- 1 cup toasted almonds and pine nuts, for garnish
Instructions:
1. In a large pot, brown the lamb over medium-high heat until it is well-browned on all sides.
2. Add the onion and garlic to the pot and cook until the onion is soft and translucent.
3. Add the cumin, coriander, cardamom, salt, and pepper to the pot and stir to combine.
4. Add the yogurt and water to the pot and stir to combine.
5. Bring the mixture to a simmer and cook for about 2 hours, or until the lamb is tender and falling off the bone.
6. While the lamb is cooking, prepare the rice according to package instructions.
7. To serve, place the cooked rice on a large platter and arrange the lamb on top.
8. Pour the yogurt sauce over the lamb and rice.
9. Garnish with the toasted almonds and pine nuts.
10. Serve hot and enjoy!
