Matka roti is made from Lokwan wheat which is locally grown.The flour is mixed with water and kneaded till it is thick and has a pouring consistency, Kneading of dough may take even an hour to knead it to required consistency. The dough is fermented till it becomes soft and slimy. A very small portion of the dough is scooped and rolled with the help of fingers and arms and then cooked on hot inverted pot. It hardly takes 30 to 40 seconds to cook a marks roti.
